Silvia is our first release from Colombia this season. Those familiar with the dragon lady art will remember this coffee from early 2024 when we released it as a limited release. Produced by one of the youngest producers in our network, Silvia Ordoñez, this coffee always stands out when we are selecting our offerings for the year. This year is very consistent with our previous release, the aromas are very floral and delicate with notes of rose and cotton candy. The cup is sweet and juicy, with a syrup-like mouthfeel that reminds us Del Monte fruit cocktail. There's notes of berries and brown sugar, all around a really beautiful coffee.
Last year we were lucky enough to visit the farm in San Agustin and meet with producer Silvia and her family. The home perched at the top of the plantation with incredible vistas, and the farm is filled with tropical fruit trees that grow along side the coffee cherries. Wet milling and drying is all done on-site, complete with a retractable roof over the drying beds to ensure evenness - the quality is evident in the cup.

NOTES FROM THE MASTER ROASTER:
Not only is this one of our favourite coffees of the year, we have a special connection with the family who produce the coffee having visited them at their farm and home in San Agustin. On the roasting team we have a weakness for the delicate and juicy coffee so common from Colombia, this is a shining example of what a pink bourbon can taste like.
This coffee is unofficially called dragon lady, and the concept was to show female strength - we found it was particularly suiting for the producer of this coffee. When it came time to name the coffee, we felt it was important to use the producer's name and simply call it Silvia. The artwork was also adapted from an original drawing that Sayuri had done for the year of the dragon.
