Our Process
Sourcing
Since our inception, we have focused on transparency in sourcing our green coffee. We exclusively source coffee from smallholder coffee farmers, or from smallholder blends from farms surrounding local washing stations as is the case for African origins. We work with a small network of exporters and importers who share our vision of transparency in payment, and supporting coffee growing communities. We pay differentiated pricing from the commercial market, paying higher amounts based on quality.
Every coffee on our menu has been specifically sampled and chosen because it sparks something in us that we want to share.

Roasting Process
Our roasting is done entirely in-house at our roastery in Sutton, Quebec. We meticulously roast coffee fresh every week for Cafe Yamabiko as well as our cafes and retail partners. We roast on a beautiful San Franciscan drum roaster using the latest software and roasting techniques.
We offer a full line of flavour profiles, ranging from modern classic to experimental and fruit forward coffees. Our goal is to highlight the best characteristics of each coffee we roast, generally we aim for sweetness and clean flavours. Our coffees are balanced and go for juiciness and balance and never sour.

Connected Experience
Our coffee line up can be tasted at Cafe Yamabiko, which is nestled in the quiant mountain town of Sutton, Quebec, at the foot of one of the regions most challenging and picturesque ski resorts. Our coffee can be enjoyed on espresso or filter, with a variety of different "milks" to accompany it if you so choose. We also serve up delicious fresh made pastries and baked goods.
We also offer private and public coffee tastings. We can work with your cafe to find the perfect coffee profile. We roast and ship North America wide weekly.
